Belgian yeasts with non-traditional hops

    I make most of my homebrewed belgian-styles with US Sterlings, but also with traditional modest hopping rates. Great beers, but nothing like "Belgian IPA's."

    While we are owned by Duvel Moortgat, we're on the Missouri side of Kansas City and I wouldn't say that the yeast strain we use for Tank 7 is a saison strain at all. I'd categorize it as a high gravity Trappist strain. I typically tell folks to go with Wyeast 3787 to approximate the strain we employ.

    Thanks for the geography correction. I was in Kansas when I first tried this beer about 1.5 yrs back, so Kansas was on my brain. I believe you may have given me hints in one of the forums when I raved about the beer back then. I remember being surprised by the suggestion to use 3787. I haven't tried to brew anything quite like it yet, but will soon. It showed up showed up in n. WI this winter, so I have had a chance to try it again. Thanks for sharing insights on the beer.

    Big fan of "tripel ipa" as a style
