Belle Saison pitching rate

    I picked up a pack of this yeast and was calculating the pitching rate for this saison.

    I expect an OG53 (brewing now) 5gallon batch. Looking at the product sheet there are 5^9 cells/gram in an 11 gram pack.

    Math says I will be pitching at just over 200K cells/ml/plato. I am all for pushing the envelope with pitching rates for yeast profile driven beers. However, isn't this a bit low?

    Seems others before me have had no problems but I am slightly concerned about this. Especially since BRY-97 has effed me before and that is the same yeast/gram.

    If you have used this yeast could you post your OG, FG, lag time and time to reach FG?

    5 gallons, OG 1,052, FG 1.000. All malt grist (no sugars)
    Lag time - not really sure but I would have remembered something alarming, so ~24-36 hours tops.
    Time to reach FG: again, not sure, but I would have remembered something alarming, so ~14 days tops.
    Beer reminds me of saison made with 3711 - not my favorite profile, but no noticeable fermentation flaws.

    I have never pitched more than a pack of it, and, like pweis, do not remember any real lag time issues. In fact, I had a krausen starting to form at around 12 hours in the batch that is in the fermenter now, which has an OG of 1.060 (haven't taken another reading yet, I will on Tuesday, the 2 week point). It has always dried me out to 1.004 or lower, as well. I also agree with pweis so far as the flavor profile, not the most interesting, but works well in something hoppy or spiced.

    I just took the fg reading for my 2nd batch , og was 1.052 fg was .995, alc 7.61. brewed it 4 weeks, 5 days ago. The first batch went 4 weeks with an og of 1.061, fg of .998 , alc 8.39. I like this beer. both batches were 18 gallons, one package of yeast for each 6 gallons.

    I will report back with a final gravity and how long it took to get there, but I just looked at this and at 18 hours the airlock activity is brisk. I do not know how long it took to start but it is moving along pretty well already.

    Pitched at 65 and left at ambient room temp of 74ish.

    Quick update for thread continuity. It looked like fermentation had slowed but still going this morning so I took a gravity reading.

    Dropped from 52 to 10 in 68 hours. Citrus up front with a hint of spice/pepper/phenols on the back.

    There was the remnants of 1/2 inch krausen ring on the walls.

    Pretty sure this is 3711 in dry yeast form which means this will have no trouble slowly munching the last 10 points. I will report back with a final gravity.

    Yes, Belle Saison is very similar to 3711, similar flavor profile and extremely attenuative. I've used it once, original gravity 1.052, FG 1.001. Used 1 packet, not rehydrated, for 2 gallon batch. Took off within 5 or 6 hours, and achieved FG in 2 weeks.
