Getting ready to brew my first Berliner Weisse probably Tuesday, it's a little out of style guidelines, but not terribly so, except for the color (14.1) Thoughts? Would anyone add another 3# (or fraction) of red wheat I have in inventory? 5# German Pilsner 2# American white wheat 1/4 # Midnight wheat 1 oz Mt. Hood @ 15 min WLP-630 mash at 150 ferment at 76
I think that if you added any more grain then the OG would end up too high. Also, with only 30% wheat you will probably be missing some of that bready wheat taste. Still, it could be a fun experiment to try. I've been kicking around the idea of a dark Berliner but haven't had the chance to make it yet. Would like to hear how this turns out!
Had a dark Berliner that a local brewery did recently...it was interesting, didn't seem like a Berliner at all.
tried a dark berliner recently and it was a complete disaster. couldn't serve it. back to the drawing board on that one!
I think you are right...so will probably sub more wheat for some of the pilsner to get to more of a 50/50 split. Only using 1/4# midnight wheat so it shouldn't be roasty or black.
You're correct, and you're also correct in your previous post that it was a very atypical Berliner. For a dark Berliner, try Bluejacket's Black Berliner Techno Weiss.
