Berlinerweiss question

    Brewing up a simple no boil berliner - 1/2 wheat and 1/2 pilsner malt bittered to maybe 5 IBUs with Haullertau(sp?)

    Planning on pitching 100-150 billion cells of WLP090 (San Diego Super yeast) as well as two packets of Lacto Delbruckii at the start. OG: 1.031

    I was toying around with the idea of throwing some Brett in the batch as well for some funky undertones. Has anyone done this for the BW and is this traditional? If so, at what time point did you add the Brett? Beginning or end? I want to aim for funk and not fruity esters so my Brett pitch will be very low (200,000 cells/ml/Plato).

    I've added Brett to berliners and have had good results. A few friends have found the same. The use of Brett is traditional and will add additional complexity. I would just go ahead and add that from the start.
