I'm in the process of making a dark "IPA" I have 2 types of dry yeast. Safale s-04 and minions active brewing yeast. Which would be better or use both? Should I rehydrate or no? Appx 6-7gallons.

I'm not familiar with minions active brewing yeast but using both seems interesting; and I'd always say rehydrate.

    (Did you mean Munton's?)

Minions active brewing yeast? Sounds suspect. Did it come with a kit?

S-04 is tried and true. Rehydrate, It is a really easy process.

    Good luck.

I'd take S-04 over Munton's. Not that there's anything wrong with Munton's, unless it came with a kit, in which case it might already be old enough to drink.

For a ipa I'd use the muntons. 04 is better suited for a stout or mild types of beer in my opinion.

You can rehydrate, but I never have and it works well.

    I'd use 2 packets if it's a 7 gallon batch.
