Between opening and drinking

    Just wanted to get a sense of people's recommendations on how long they wait to drink a beer after opening it.
    A friend of mine used to open a bottle of Old Stock the night before he'd drink it. I've been on a RIS kick recently and have been doing the same and loving the effect this time has on carbonation and booze heat (the same has been true of most barleywines, old ales, and dipas). When I've tried this with other beers, however, they taste flat after only an hour.
    Other success stories/warnings?

    Overnight? I've never heard of that. I let big beers warm for a bit before drinking though.

    A month ago I opened a st bernadus 12 750ml at like 9 pm. A few sips into it I got a call and had to bail my friend out of jail an hour away. Got back at 4 am and finished the bottle. Does that count?

    Never waited more than a few minutes before the first sip. Even if it's too cold, I like to see how the taste develops as it warms.

    I have not heard of someone opening a bottle 24 hours before drinking on purpose. Maybe I'm missing out.

    Interesting. A go a max of twenty minutes. Never did anover night 'on purpose'...if you catch my drift..

    Never heard of this either. I'll let a beer warm a bit before I open it, but once it's open I start drinking.

    I always take a sip after opening just to see. Depends on the beer though, i'll cup my tulip glass to warm a beer up slowly. i find this works great with westy, chimay, westmalle, etc...

    Interesting, never heard of this “strategy”. I usually take a beer out of the fridge, wait about 5 minutes, then open it and drink it over the course of 30–60 minutes to see how the flavor changes with temperature.

    Beer isn't wine so decanting really shouldn't be a huge issue. Some beer will last for sometime after opening but you can pretty much bet it won't improve much with aeration.
    Though there exceptions depending on what you are drinking.

    If I'm drinking a geuze I'll often pop it and let it sit about 30 minutes or so before I pour it. That's not necessarily a temperature thing, I just find it allows the beer to breathe and open up really nicely.

    I have occasionally opened a bottle of something wine-barrel-aged which was too barrel forward, put it in the fridge overnight, come back the next day and it's significantly better.

    Once opened I can no longer wait. Even if I try.

    5 minutes wait max.

    I open and start drinking straight outta the fridge. I feel like i can pinpoint different tastes as the beer warms

    1) Open
    2) Pray it is not a gusher (this can last up to an hour)
    3) Pour and consume.

    The rest is negligible in my life.

    I open my closet and peek at my beer usually a week or two before I open it. Just to make sure the beer is still there.

    I never timed how long it takes me to walk from the kitchen to the couch.

    Open bottle.
    Pour beer into glass.
    Walk to desired location.
    Drink beer.
    Repeat.
