Big Brew Day 2012

    I'll be at Columbus Brewing Co who are supplying free wort (and roasting a hog). So I will brew what they make - some slight variation of the Bucksnort Brown. Not sure if I will brew anything else Sat, but I am brewing a Belgian IPA today with some fun NZ hops and a DIPA Friday (simcoe, amarillo, citra).

    Hope to bottle a Kolsch this weekend too, so I have a full plate of homebrew for the next few days.

    We have a few members of my club doing a 40 gallon batch of American Brown on a club member's (and local homebrew shop owner's) system. We have tweaked the recipe a little bit and have it being a little bigger of a beer, and using a few different grains.

    moose drool is a very nice brown, have a couple in my fridge...i believe there to be some hazelnut in there as well

    Pineapple Mango Saison?? sounds glorious! this a recipe you woundn't mind sharing?

    Pick up a fresh pineapple and a fresh mango.

    Ok, so I use Half a pineapple and mango sliced up. I primarily just ferment the Saison for first 3 days of primary and then remove. This last time I put 2 pineapple slices in muslin bag then in last 2 minutes of boil (then remove)

    60 minute boil partial grain/extract Saison

    My OG is always between 1.045-1.050 for this one. I make a 2 liter yeast starter White Labs WLP568 Belgian Saison Blend

    5 lbs. Briess Pilsen DME
    1 lb. White Wheat
    1 lb. Light Candi Sugar
    1 oz. Hallertau (6.5% AA)
    1 oz. Saaz (4% AA)
    1 tablespoon Coriander
    2 grams Grains of Paradise
    10 black peppercorns (optional, I don't always use this but I do if I want add more peppery undertones w/ Saison yeast)
    1 oz. Bitter orange peels
    1/2 Fresh sliced pineapple
    1 sliced/cubed Mango

    Bring 2½ gallons of water to 170 and placed crushed Wheat inheated water for 30 minutes. Remove grain and add DME+ Candi Sugar and bring to a boil. After first hot break add bittering hops (1 oz. Hallertau @60 mins).
    Add Half oz. Saaz & Half oz. Bitter orange Peel @ 30 mins
    Add Half oz. Saaz, half oz bitter orange Peel, crushed tablespoon coriander, 2 grams Grains of Paradise and Whirfloc tablet (or Irish moss) @ 15 minutes.

    Cool Wort and add to primary with 3 gallons of water. Get readings, pitch yeast and add 1/2 pineapple and 1 mango (in muslin bag, sanitized). Remove fruit after 3 days of fermentation.

    Its a nice little summer Saison with a tropical fruit in the nose and slight tropical flavor on top of a refreshing Saison. Let me know how it goes! PS I wait to bottle or keg till FG reaches just under 1.00

    brewing this tomorrow for the first time.
    converted recipe to all grain and using liberty in lieu of hallertau, but pretty much the same.
    cant wait!
