Biloba Brewing - Brookfield WI - any info?

    very few reviews here. never heard of it until today when searching for stores in Brookfield. can anyone comment on their beers? brewery worth a stop?

    Definitely worth a stop! Latest taplist included a nice cream ale, really great Rye Pale (almost brown) ale (@ 4.75% we happily took a growler home- great flavor), a hefe and saison, a saison on oak, a black IPA brewed w. midnight malt, so drinks very much like a regular IPA, solid belgian golden ale, a wit, and a rye barrel aged smoked wee heavy.

    Really impressive and unexpected. They don't fill all of those, but you'll definitely take some beer home with you! (They do run out of growlers sometimes, so bring your own!)

    They're pretty darn impressive for such a small operation. They don't really push the limits with any extreme brews, but they are very solid across the board. The smoked saison I had was excellent.

    They don't have any formal food. They'll give you a dish of bar snacks though.
    It is a very very small place. The brewing operation is behind the garage door and about half the area of the first floor.
    The tasting room is the other half on the right side. Basically just a small bar with taps and a bunch of tables. It's certainly kid friendly.

    Just headed there a few hours ago, here are my thoughts:
    • Impressive selection of styles
    • Most of the beers didn't seem to be properly carbonated. Many of our samples came with very large heads that had to die down prior to us drinking them, which then left the beer undercarbed and slick feeling
    • Nicely decorated, but they already seem too small for their space. Got there right when they opened. Within 30 min there was a line of people waiting for growler fills. Staff was friendly, but seemed fully busy with about 10 people there. We were told that they basically fill to capacity on Friday nights, that would be a nightmare.
    • Oaked saison has a nice tartness. However, the flavor profile of tart red berries is dangerously close to tasting infected. Not sure if this is truly what they wanted, or if something is off.
    • Wit is also tart, would never guess it was a witbier
    • Smokin' Gramma is probably their best brew at this point
    • Definitely have some upside potential, could see them having some pretty solid brews with time

    No food, but a food truck usually rolls by on Fridays.

    Pretty good beer, I really like the oaked saison. It's really nice living down the street from a brewery. They've already ran out of space inside, have some tables outside now.
