Was wondering if anyone had any suggestions on what kind of bittering hop would go well with a bock recipe.

a neutral German high AA hop is Magnum. many of us have it on hand for bittering when a few extra IBUs are needed. it is often described as "smooth", whatever that means.
i like Magnum because it is very unobtrusive. it is widely available.

Perle is also a fine bittering hop, but you will know if it is used.

a proper bock should not be a showcase for hops.
    Cheers.

i have some Herkules in the freezer... and it looks like i am making a Bock this weekend. thanks!

I've found premiant to be a pretty neutral bittering addition... could be another option for you

Magnum or Galena imo, should be just clean & neutral hop

If you're trying to Americanize it, I'd think that C hops or Amarillo would play nice with some yeast choices.

I used hersbrucker both early and late in weizenbock, and really liked it. I think it was the combo of that and yeast I used though, it was wlp 300. Right now that's what I would use.

I've found that I really like a hefty charge of low AA% hops for bittering in beers that have no other hop additions. Use whatever noble variety you have around
