    I also have an extract version that's pretty good. I actually started with that before moving to all grain.

    Well let me know how it turns out. After you rack it, I would recommend not tasting it for at least 4 months. Pretty green. And then I sample one about once a month. You will be amazed how the flavor changes. Even if somehow you don't get too much of a bourbon or wood flavor, which is what's going on with the batch of earlier this year in January, it's still a mighty fine Stout. I'm about start drinking that batch of it around Halloween. This will be the third year. It's an annual release with my friends and family.

    If you bottle, after it has been bottled for more than a year, you can get some off flavors from the dying yeast. I would love to put this in a cask in the future

    I'm slacking bad. Have not completed my new brewery yet after losing the old space; just too many outdoor chores, horses, dogs, firewood, weed wacking all summer, etc. Also selectboard duties. And being the Covid testing admin at my day job. (Boy, I sound stupid. Why did I think I could do all this stuff??) Getting close though. And brewing in winter will be a lot more comfortable with the electric system. A stout will be 2nd on the list after a dial-in generic pale ale.

    Kegging and then bottling off the keg works pretty well for big stouts and barley wines. I've made a few big beers that took a year to become drinkable but were then wonderful.

    Yeah I'm going to start bottling the big beers woth a designated carboy just for bottling and purging it with CO2. I'm done with bottling buckets!
