I understand making black and tans with a stout that has nitro and have done it many times but how do you go about layering two beers that are CO2? Do they have to have significantly different final gravity, ie. something like DFH WWS and an amber ale? Any tips or explanations would be greatly appreciated.

I have seen a special spoon thing that allows you to do it. Google it.

when making layered cocktails or shots most bartenders just use a spoon. turn it upside down and pour on it like you would use the turtle spoon thing. that way its free...but the turtle is a neat conversation piece.
