Black cherry juice at bottling

    I am getting ready to bottle my black cherry habanero, Belgian triple. I want to get a little more black cherry flavor in there and was going to add another 8 ounces of concentrated Knudsen black cherry juice at bottling. Do you think this has a significant amount of sugar in it that I would over carbonate?

    8 oz. of Knudsen Black Cherry Juice Concentrate has 132 grams of sugar. You can get that information from the nutrition label of any juice/concentrate/whatever.

    If you're using that (and no additional priming sugar) to carbonate a 5 gallon batch, you're looking at roughly 2.6 volumes of CO2. I wouldn't consider that over carbonated, but it depends on the style and your preference. In a Tripel, most people would probably consider that undercarbonated, and add more sugar, but not the full amount they would have used without the juice concentrate. Also, if carbonating to high-ish levels (typical of Belgian beers), make sure your bottles can handle the pressure.

    What @VikeMan said - spot on. I can also attest to making sure your bottles and caps can handle any higher pressure...it gets ugly really fast if they can't.

    I don't know if the general public can access flavor compounds. There would be no added sugars in a natural or natural-like black cherry flavor, but flavor house may not sell to individual buyers. And it may take a while to find one you like.

    I think you are better off sticking with the juice or fruit but beware the sugar content. The fruit contains 18-ish grams of sugar per cup.
