So I just finished kegging a recent IPA from a new stainless steel brew bucket and noticed black color in the krausen ring. Look similar to black mold. Never seen anything similar using my glass carboy. I pulled a sample and it tastes fine and smells frigin awesome. Think it's still safe?

That looks pretty awful. Does it have a smell or a taste to it?

Not going to say you didn't do a good job cleaning, but I feel like the first few times you use a new stainless steel vessel it always seems "dirty". My two trials with my new brew kettle where like this. First time it looked like a yellow is film came off, and the second I had another film that seemed to come out at the end of my trial. Can't say you are seeing a similar thing, but it is just an observation of mine.

No off flavors or smell on the sample. I took a small sample from the side port before doing a closed xfer to keg.

When I opened the fermenter the smell is crazy good grapefruit/tropical goodness, no off smells that I could pick out.

I was questioning the cleanliness of the stainless. I did the prep cleaning, star san passivization, and wiped it with a clean white rag to check for oils, which came back clean.

If there was indeed oil left behind from the stainless, is it dangerous? With no off smells or flavor so far I want to keep it, but honestly am a bit worried about it. Black stuff is never a good thing.

I have no idea if it's dangerous or not (I'm guessing not), but when I first received my stainless steel brew kettle, I did a boil with plain water at the advice of people on a different thread in these forums. It did indeed seem to remove some sort of manufacturing film off of the inside of the pot, as there was slightly different colored-finish to the area that was touched by the boil water.

At what concentration? The instructions say way more concentrated than normal StarSan solution.

I did the Brewtech recommended 1oz/gallon for like 2 hours since I couldn't bring the temp up to 80 that day. (Recommended 30 min at 80 degrees if I remember right)

I thought it might be your etch marks, but your pix shows that they seem to be intact.

If it is what I think it is (a slight oxidation of the surface treatment) then it should be OK. I forget what it is exactly but the way they shine the SS will oxidize and falls out visibly. After the first few cleanings/uses should stop happening. SS cleaners are suggest to be used to help make sure it happens from the get go. It was part of the reason I did 3 boils with just water with my new kettle, although the first one kind of scared me.

All said and done, at worst it should mostly be in the trub at the bottom of the fermentor.

After the cleaning and prep, I did do a cycle of just water. More for getting the base measurements but did watch for the rainbow colored drying effect I have seen mentioned if oils are left behind.

Man I don't want to dump this batch, the smell when I cracked the fermenter was a crazy good blast of grapefruit smoothie. I've been beating on my liver for years, so maybe it can process some SS oils.
