Blending sours, base beers, and bottle bombs

    I have a sour farmhouse ale that is just too sour. I am planning on brewing the base saison and using sacc to get her fermented out, maybe some brett to bring it down, but what prevents the lacto from just eating whats left and creating bottle bombs?

    Lacto should poop out once sacc has eaten all of the fermentables.

    Depends what lacto you have, not all strains of lacto produce CO2

    Depends on the strain/species. Some produce alpha-glucosidase, meaning they can eat pretty much the same dextrins as Brett.

    Five bucks says he used dregs and doesn't know which lacto strain(s) it has. Awwww...:grinning:

    So does most lacto only eat the same fermentables that sacc eats?

    Just contact the brewer. He is very generous with sharing information about his beer.

    Brett can eat stuff that lacto can't. Give it time to do the job and you will have no bombs.

    Is kegging an option? Or even bottling from the keg with a beer gun?

    One species apparently is, anyway. (Pedio is a genus, with multiple species.)

    They are also very closely related in general, same Family (closer than Brett and Sacch which are in the same Order).

    No kegging on this. Strictly bottles. Just gonna brew another saison for blending and do some more research before bottling time. Thanks guys.
