I just got my hands on a few Westy 12 and I want to do a blind side by side with Rochefort and St Abt. So between smells and more importantly tastes, how long do you wait? Do you try and cleanse your pallet between? I've never done a blind side by side by side before so just looking for a few pointers.

Have someone pour them about 4-5 oz each into its own glass so you don't see that. Sample side by side, back and forth among them. Have plenty of water and saltless snacks to nibble in between when you switch from one sample to another (e.g., water crackers or unsalted pretzels). Have a note paper for each. As you sample it try to decide what you like/dislike, flvors you are picking up, etc. After you finish about half or each portion of each beer start deciding which you prefer. (e.g. you can line them up and swap the order until you reach a final preference order. (if you have a numbered piece of tape on the bottom of the glass where you don't see it you can then find out which is which.

That's what I had in mind.
