Blonde vs Blonde...can't decide

    I have been on a real run of applying the KISS method of brewing these days. Simple SMaSH's and minimal ingredient beers (Hefe, Saison, IPA, etc.) and now its time to try some thing new. I am going to brew a simple American Blonde ale but decide on what hops I am going to use. Malt bill is as follows:

    9.5# Maris Otter
    .5# Crystal 60

    English Ale yeast (either White Labs or Safale)

    I want to use a 1 oz 60 minute addition and a 1 oz 5 minute addition.

    My choices are either Willimette or Cascade.

    I cant decide what hop to use.

    help me decide.

    Although they are both technically American hops, Willamette definitely leans toward an English character. So the question is... which character do you want? Either one is appropriate in a Blonde. Just don't overdo it. Blonds Ales are traditionally (short tradition) really about clean-ish malt flavors.

    Also, my better Blondes have used no crystal malt. I'd consider something like Munich in place of the C-60.

    Neither Cascade or Willamette would be my first choice for bittering (or second, or third). They both have low alpha acids (which you know) but also have high co-humulone levels which tends to leave a harshness (think Arrogant Bastard). There is a reason Magnum (and some others) are favored for the early addition. IMO your C & W would be wonderful to add late together. Blending hops would be your something new.

    My choice: Belgian blonde.
    White Labs 550. Willamette. Some turbinado or other light sugar to bring the OG up to about 1.062. Or skip the sugar and brew it a little lighter than style.

    I would use both for bittering and flavor/aroma. As it won't take much to achieve the proper bittering level in a blond, I don't think harshness will be an issue if these are used for bittering. Although if you have a bit of Magnum sitting around, it is certainly a very clean bittering hop.

    You are right. I have brewed a bunch of Blondes (with appropriate bitterness for a Blonde) with Cascade and there is no harshness.

    I could do that. Split the bittering and late addition 50/50 with Cascade and Willimette.
