would any of you care to help to provide some help in putting together a recipe for this beer? my mom used to make "agua de horchata" when i was younger and it was awesome, especially around the winter months. i have had many ideas on brewing something like this with a milk stout and a light beer like the one blue moon came out with. i'm just not so sure how to incorporate the horchata feel and taste to the brew. is my best bet making a gallon or so and then adding it bottling/kegging time?

I'd say to basically brew a Witbier, but with some pale crystal subbed for a bit of the flaked wheat (say 60% pils, 20% flaked wheat, 10% C10-20, 10% flaked oats), use a neutral but low attenuating yeast (wy1728, Blue Moon actually uses an English yeast instead of a Belgian one, anyhow), and switch up the spicing.
If you're interested in etymology at all (and who isn't?), the word Horchata is actually derived from the Latin "hordeum", meaning barley, so don't sweat the lack of rice too much.
