Blushing Monk

    My wife loves Rubaeus and I plan on getting some Blushing Monk when it's released next week. My question is, is it okay to cellar this beer for awhile if I get a good amount of it?

    I noticed people are still breaking open bottles from 2011 but does it age well?

    Have not had one in a year or so, but it was great! So, I would say it ages well for at least a couple years.

    I ran across a Frangelic Mountain Brown at the store a day ago but passed on it because it was $20, wondering if I should stop back and pick it up. I ended up buying an $8 bottle of 2011 Matilda instead, no idea what to expect from either.

    I think the consensus in the cellaring forum is that you can age this for years with no drastic changes. They said the strong tartness falls off after a little while and then it's taste is stable.

    I picked up two bottles today (never tried it before) and I'm wondering if I should drink one soon and cellar the other, or cellar both of them?

    Drink one now. You don't know if you are saving something you like. If you love it, try to find more for the cellar. Also keep in mind the post above that it doesn't change a lot over time. I don't have any experience with this beer to know. With that in mind, my only point of keeping it over time would be if Founders only makes it every few years and I want a stash to get me through that time, but not because I want to change the flavor characteristics.

    Don't bother. FMB was watery and artificial when fresh, time can't have done anything good to it.

    Can't wait to grab 6 bottles of this....loved it with 2 years on it but I only had 1.

    Thanksgiving is all I can say.. If u don't open one next to turkey and stuffing your missing one of the best beer and food pairings in the world!

    Just opened an '07 and '11 last week. Absolutely stunning flavor from both bottles.

    Had an '11 recently and it blew my mind. Picked up three of this year's but haven't tried 'em yet. My question is: does the flavor change over time or is this just a case of a beer that holds up well and doesn't deteriorate?

    I think it's a case of the raspberry flavor holding up very well over time, while the other flavors eventually take an backseat. For what it's worth, this 2015 batch tastes almost exactly the same as the 2011 batch did fresh: quite sweet, a bit boozy, and overall just a very "decent" beer. Thankfully those flavors fade and the result is something fantastic.

    This is absolutely my favorite beer to age. You don't even want to know how much I stocked up on due to the fact that it ages so well.

    Thanks for the answer. How long would you say it took to hit that sweet spot? After trying the 2011, that's how I want all my BM to taste. Willing to wait as necessary.

    I'd say that it starts getting better around 1 year, great at 2, and anything more than 3 is unnecessary as it doesn't get much better than that.
    I'll be opening one of my last 2011's next weekend in Chicago.

    11 tasted great over the past fall. can see it probably not getting much better
