I'm looking at a bottle of Boon Parfait and it says 2007. Is this the bottle date? Brew date? I want to build up the dregs so I can brew a lambic but am wondering if the yeast and bugs are far to old for that.

Go for it and see what happens. If it works, great lambic, if not, you wasted $2 and a few weeks wait time. Report back as I have a bottle of the same I wan to use  BTW, I believe the date is bottled, not brewed since I've seen 2010s and not really any gueze turn around that quick.

    That's a tasty geuze, too.

2007 is the brewing date. They bottled it recently (2007 label should be the newest "vintage" available).

So what I'm hearing is... drink a few bottles over the next few days as it's going to be freaking hot, then add the dregs. I can handle this.

Where do you see the date? I have one that says 26.04.202(5?)

Frankly these are to me a very strange Geuze. In a blind tasting I'd never guess that it's a Geuze.
