    When brewing with corn as an adjunct, and I'm assuming a major one at that, in conjunction with Pilsner malt, have you needed to make any allowances for mouthfeel and head retention due to protein levels? The original CAPs at least utilized 6 row to alleviate any such issues?

    I ask because I've had a few other beers made similarly and they had pretty much zero head retention and were carbonated like soda, even though the flavor was spot on.

    How did you land on the blue corn? What about that corn variety made you decide to use that one?
