Just looking for tips to properly store my bottles and couldn't find the information I was looking for. So I thought I would throw it out to the beer nerdom world.

What are the best beers to age (I know RIS and sours can be aged but didn't think you could age hops)?

How long can they be aged? Imperial stouts can be years, but how long? What about Brett, Gueze, other sours, etc.?

Best way to store your botlte? I have heard about using electrical tape or putting you own wax on it.

Best temperature? I tend to keep my cellar at 55 degrees, but does it vary by style?

Any other tips to better bottle age/condition my brews?

    Cheers!

Yeah, I saw that. I guess I'm looking for more tips from what people actually do and what beer styles are better to be aged. I wouldn't want to age a King Sue for example, but I have heard that there are some IPA's that can be aged a bit. I have a fridge that I have dedicated for my cellar and keep the temp just between 50-55 degrees.

High abv beers like stouts, barleywines and old ales will age well. i age my in a refrigerator. but any cool, dark place is sufficient. Some key components are darkness and consistent, low temps. Some sours like geuze or lambic say they can be aged up to 25 or 30 years. Do not age hoppy beers. There are debates as to the effectiveness of wax. Generally store them upright. Do not bury them in sand.

EDIT: Seriously, there was a thread about burying beer in sand to age it. don't do that.

Why the bags? Just curious. Also, looks like a decent amount of Pseudo Sue!

Hahaha, that is awesome. Do you ever leave the bag on until after you've tasted it, and tried to figure out what you are drinking?

Someone was going on about how Germans many decades ago, would buy their Berliner Weisse in their gardens for a couple months in the spring.
    I like the idea.

I buy electricians tape and tape the caps before putting them in my cellar

    What does the tape do?

In my opinion, it seals the cap well and prevents oxidation

I have heard about the tape before also and wasn't sure as to the reason. It makes sense and kind of acts like wax if you think about it.
