Bottle Conditioning and Long Term Cellaring

    How long do yeast and other critters survive in bottle? I can only imagine they starve to death eventually, but will a two year old beer still be fermenting? How significant is the change in abv as the beer continues to age?

    I'm pretty sure they are inert after a few weeks.

    Depends if you are talking about zero yeast alive, or just a small enough number to have no discernable effect.

    Yeast does go dormant when food supplies run low, so for the former you'd be looking decades if not a century or more in the right conditions. For the latter, my guess would be ~4-5 years (again, in the right conditions).
