Bottle Conditioning Questions

    I am big fan of Dogfish 120 and I'd like to try aging the beer. I'm new to this, so I have a few questions:
    • What temperature should this beer age at?
    • What changes in flavor should I expect? More sweetness?
    • Will the alcohol content of the beer increase? By how much?
    • How long should I age the beer (starting from the purchase date)?

    • What temperature should this beer age at? 55F
    • What changes in flavor should I expect? More sweetness? More perceived, maybe. Less hop aroma.
    • Will the alcohol content of the beer increase? By how much? No, not sure where this idea came from.
    • How long should I age the beer (starting from the purchase date)? As long as you want. Try one every 6 months if you can.
