Bottle priming with bananas?

    Not the worst idea I've heard of... :wink:

    If you're really going to do it, get super ripe bananas, mash them up, and heat them up to ~65C for 30 mins or so first. Not only will this help kill off any bacteria that may be there, but from what I've read, bananas have enough enzymes to actually self-convert their starch into sugars.

    I've done this before, and it worked a treat. Just be advised that you will end up with a quite unappealing colour...

    I have not gotten hold of a kegging setup yet, unfortunately.
    And i agree with plan to mix it in a bottling bucket. It sounds is reasonable. I dont have acceess to refractometer, but I think l will assume 30 % sugar content and shoot for a carbonation in the lower end of the style.

    [​IMG]So i tried a recipe I have used before, a Franziskaner clone attempt. I assumed that the very ripe, mushed and frozen/thawed bananas had 1/3 sugar per weight. So following that logic, I used 10 g sugar g/L and 30 g/L banana for the different 'groups'. Carbonation turned out to be pretty much the same. Colour was also pretty much the same, but the banana primed was more hazy. Taste was pretty similar, but the banana primed was a little more rounded.[​IMG] I probably wont do it again becouse yhe *****s of old banana were pretty gross floating around in my beer.

    The second popped the cork the sedimend/dregs jumped to the top of the bottle. Interestingly, no bottles have exploded yet.

    Well that was anti-climactic. Here I was waiting for an exciting tale of bottle bombs and banana-goo on the ceiling.

    Yes... l also feel a little disappointed. Maybe I'll try something even dumber for my next brew and get some more interesting results

    I wouldn't. But that doesn't mean you shouldn't. You can always bottle a couple with bananas and leave the rest of the batch alone.

    I have found that banana flavor can be very fresh in the first week or two, but it changes significantly over time. Not a bad change necessarily. I did bananas in the mash.

    I love trying new stuff, so I'm interested to hear how this turns out.

    Look up "120 minute IPA clone" on youtube. The bar has been set pretty low.

    ETA: I should add that I've hear that the guy became a pretty good brewer. To his credit, he left the videos up.

    I did a Banana wine with 15 lbs and there was no smell or flavor.

    Update: no bottle bombs still, but dont lose hope.
    I'm a bit surprised to see that the banana had a gelatine like effect though. My hefe is now super clear. Not what I meant to happen and perhaps not the most useful new information, but I thought I should share.
