I have a selzter with the following ingredients fermenting right now and the plan to finish it off. Normally i would just keg it but I would like to try bottling cause I don't have a vacant keg.

    Is this a good plan?

    3.5 gallons water
    2lbs Panela Sugar
    2lbs corn sugar
    64oz Watermelon Juice
    Kviek Yeast

    Last 4 or 5 days
finish with 6oz Lime juice and 3 Jalepenos

    1052 Gravity

Going to just get some sugar priming tablets and cap it.

Should I be doing anything different?

Never made a seltzer, but see no reason for what you have planned not to work. You are going to have to be careful with sediment in your bottles. Cloudy seltzer could be a turn off for some people.
