I am going to bottle a Russian Imperial Stout today. I want to let it sit in the bottles for at least 6 months before drinking any of it, but I also want to check its progress each month. Would it be okay to bottle ~2 oz. in six different bottles to try over the course of six months before cracking a full bottle? Would the excess space in the bottles cause the beer to oxidize quicker?

I would be hesitant to do this. I think it will not carbonate properly and will oxidize quickly. You could try to get some 7oz nip bottles (not sure where other than buying Rogue beers). Assuming this is an 8% or higher beer, I'd let them sit until the weather cools down and enjoy them then.

2 oz of beer in a 12 oz bottle would quickly oxidize to complete garbage.

Thanks for the input, guys. I will definitely nix that idea. I thought oxidation would be a problem, but I wanted to be sure. I can wait the six months.

Probably for the best. As I said, you may see if you can get a few nip bottles and taste after 3-4 months. Good luck and be patient
