I have been wanting to get into cellaring beer, but didn't have the drive or willpower to get it rolling until I sampled a few vintage beers a friend of mine popped open last weekend. I finally took the leap tonight and bought some beer for the purpose of cellaring.

    My cellar now has:
3 Hair of the Dog Adam
3 Hair of the Dog Fred
    2 Consecration
    2 Temptations

The friend of mine that opened his vintage beers suggested I seal the caps if I can. He recommended using wax but said electrical tape will work also. I am storing them in the cupboard above my refrigerator since no one ever goes in there (thus limiting their light exposure) and because the kitchen stays a fairly consistent temp (often lower than the rest of the house because it is all tile). Any suggestions you guys have for me would be awesome!

A nice start to cellaring. My collection is coming along great as well, and I'm enjoying it the more I add to the bunch. I know you too will like it more and more as time goes by.
