    2015 will see us release riffs on our Smokestack Series Limited Release Imperial Stout. As a base beer, Imperial Stout serves as a ridiculously sturdy starting point for layering flavors by incorporating new ingredients or barrel aging methods. Imperial Stout has a huge grain bill featuring several types of malted barley, wheat, rye, oats, and spelt. Robust grain and chocolate/coffee flavors are counterbalanced by date and plum notes from Scottish yeast.

    The second installment, Imperial Stout X – Aztec Chocolate, takes inspiration from traditional drinking chocolate referred to as Oxcolatl. The ancient Aztecs held chocolate in such high regard that in addition to its place as a holy drink in ceremonies, cacao beans were a form of currency. Accounts vary, but the drinking chocolate the Aztecs consumed combined a paste of cacao beans with spices, chili peppers, vanilla and in some cases, wine or another fermented spirit.

    To bring our interpretation to life, a batch of Imperial Stout was brewed that received freshly ground cinnamon during the boil on the brewhouse. This batch will be blended with tanks of Imperial Stout that are infused with dried pasilla negro and ancho chiles as well as cacao nibs. The chiles and cacao nibs were stuffed into porous bags and suspended in sanitized stainless steel tanks. Finished beer is transferred onto the chiles and nibs and allowed to rest for 24 hours of contact time. Following the infusion, the beer is transferred to a blending tank and blended with the cinnamon spiced batch. No portion of Imperial Stout X – Aztec Chocolate is barrel aged.

    Imperial Stout X – Aztec Chocolate is 11% ABV and will only be available in 750 ml bottles. Locations that normally receive our Limited Release Smokestack Series beers should expect to see Imperial Stout X – Aztec Chocolate.

    As of this minute, we’re targeting a June release date and hope to share a specific date as we get closer.

    This is exactly what I'm looking for in Stouts these days. Xocoveza was the first stout I had with peppers, cinnamon, and chocolate in it then I had New Belgium Cocoa Mole and that was just as good if not better. Looking forward to this one. I sorta made my own this past weekend. Had a Saint Archer Coffee Brown and poured the second half into a glass then added a drop of vanilla extract and grated a little cinnamon on top of the head and voila my very own version of this beer or somewhat close.

    Is this an extra release or is this replacing the rum version that was sceaduled for june on their calander

    Replacing the rum version. The barrels they received were in craptastic shape.

    I believe they are looking to see if they can procure some different rum barrels for the possibility of doing a rum variant in the future.

    This is a replacement. Apparently the rums barrels they bought were in terrible condition so they decided to not use them.

    This sounds fantastic, though I'm a bit bummed to hear the Rum variant is no longer on deck for the X series this year. Oh well, this will fill the void just fine!

    Our barrel wrangler is looking into sourcing rum barrels for a release at some point.

    Great news. Mexican stouts are always welcome. Even better that I won't need to trade for it.

    I was hoping for something barrel aged, because that seems to be the thing these days, but this sounds wonderful.

    ISO. I would LOVE to see more Chile, chocolate, spice combos out there. They make fantastic beers. Prairie bible belt may have been the best stout I've ever had, so I have high hopes for this beer.
