Bourbon County Prop '15

    Do you think aging Prop '15 will mellow out the maple sweetness? An explanation of why or why not would be helpful. Thanks!

    Well, beer typically does dry out a little with age. But people who've drank Founders Curmudgeon's Better Half and 2011 CBS (both use maple) after a few years say that they're better fresh. I've heard complaints of them getting "minty". Don't know if that's unique to Founders or if it will happen to other maple beers too. I've never had either, but that's just what I've heard.

    All bcbs tastes better with age except coffee. Prop for sure needs at least s year to mellow.

    Yes because it is so overly sweet right now and the flavors disjointed that I think age will do it very well.

    Not sure why would coffee not age well? I just had a 2014 BCBCS that was unfrickingbelievable. Not trying to be a dick, just curious. I would think the coffee would not matter and you could still put 2-3 years easy on that beer. Please advise as I have a bunch I am aging.

    Not sure this is an accurate statement....haven't ever heard of a BCBCS not aging well nor have I experienced it myself. Give my vintage BCBCS any day.

    To the OP, The maple sweetness will most likely mellow with age. The problem is, so will any distinct maple flavor. I recently had a couple pulls of 14 CBS and that maple flavor kind of went away from what I remembered after having it a year ago. That said, Prop is a bit too sweet so that probably won't be a bad thing.

    Bourbon County Coffee is one of the rare coffee stouts that doesn't lose all of its coffee through aging. Vintage BCBCS is a real treat.

    I may be wrong with BCBCS specifically. I've aged other coffee stouts, and the coffee flavor dissipates regularly. My guess is if you aged a BCBCS like 3 years, it would just turn into basically a normal BCBS, just a guess though. I'm sure with just a year on it, it would be amazing :slight_smile:

    I love this misconception because people trade old coffee bombers for semi reasonable amounts because they are worried about this. I've traded for many bottles of 11 and 12 that I'm sure have been stored in less than ideal conditions and have never been disappointed. If you want the coffee to punch you in the face like a fresh 14 then you'd be disappointed but I enjoy how the coffee mellows out over time but still adds body to the base beer. That's the joy of personal preference in trading! I might just value those old coffee bombers more than most and trade accordingly! :slight_smile:.

    Maple syrup consists of a very simple sugar and will be eaten by the remaining yeast first.
