Over Thanksgiving and the days after I was able to enjoy the recent abundance of Goose Island BCBS and BCBCS. I have been told many different things and cannot get a straight answer. What is the stout that Goose Island ages? My taste buds need to know.

BCBS is aged in bourbon barrels. I don't think Night Stalker and Big John are aged by the brewery.

I was told that Night Stalker is their base stout. Add cacao nibs and get Big John or put it bourbon barrels and get BCBS.

    Does anyone know anything different?

Cook County Stout is the base beer.

Add cacao nibs and get Big John
Dry hop it and get Night Stalker
Age it in Bourbon barrels and get BCBS
