I brewed a low gravity Belgian pale over 4 months ago. I added Brett B (WY5112) in 2ndary. It's not ready to bottle just yet, but I was thinking of dry hopping before I do. Any suggestions as to what type of hops would go with this? I used Saaz and Sterling during boil.
I would ask what exactly you are looking for? I assisted a local brewer with a one off split batch of Brett secondary Saison. He did Hallertaur and Saaz, I did Galaxy, Simcoe, and Amarillo. His was much more in line with a Belgian Saison, where mine was much more American. His was more herbal and spicy, mine was tropically and punchy.
I made the mistake of dryhopping after I hit a solid fg, but before the brett was really where I wanted it. Once I bottled the hops were nice but the brett was muted, by the time the brett started to really shine my hops had faded (6mos in the bottle).
FWIW, I brewed two batches where I co-pitched a Belgian Ale yeast strain and Brett B. After fermentation was complete I dry hopped with 2 ounces of Styrian Goldings; I was going for an Orval kind of thing. In both batches the beer was very much dominated by the Brett B funk flavors (e.g., barnyard, horse blanket, etc.) so I really couldn't perceive the dry hop aroma. Since you are doing a staged fermentation (i.e., Brett B added after primary fermentation is complete), maybe dry hopping with Styrian Goldings would 'work' for you? Cheers!
I brewed a Brett C grisette a couple of times and changed the dry hops each time. Simcoe the first time, Galaxy/Nelson the 2nd. I loved the Simcoe, tons of pineapple.
Actually I'm changing mine to ADHA 529 after trying a local Wild Ale that I'm pretty certain was dry hopped with it.
