brett custersianus IPA?

    Any ever try an IPA w/ this strain? Just curious on the results.

    I really enjoyed the results it produced in primary fermentation (mango and white grape). However, it actually took some time to get to that point. When it was young it was really clean. The issue there is if you wait a few months for the character to come around, you'll lose the hops. It'd be a fun combo with Brett Drie/Trois I think...

    I did this combo. Turned out very nicely. The beer definitely evolved over the 2 or so months I had it around in the keg.

    I was actually just thinking about this! How about make it with just some bittering hops, secondary until it gets fruity, then dry hop the shit out of it for a bit before bottling?

    glad someone posted this. i've had a vial for a few months and have had zero clue what to do with it.

    after reading TMF's report, i'd guess that i'd brew something like:

    85% pilsner
    10% acid malt
    5% wheat flakes

    citra and mosaic, i think, would be my hops. IBUs would be low. late additions would be there for flavour.
