I can't seem to find a clear recommendation on the interwebs... I've got a brew that was fermented with Philly Sour and has been split into 2 fermenters to sit on fruit for a week. This weekend I'll rack 1 gallon of each to receive Brett Brux I. How much to pitch? TIA
One pack of Brett Brux is enough for 5 gallons. So if you’re doing 2 gallons, I would use roughly 40%. I don’t believe pitch rate is super critical for Brett as secondary fermentation. Actually, if you know of a commercial beer that uses the type of Brett you want you could just pitch the dregs for a gallon batch.
Grab an Orval, chill for three days, spritz under cap with Starsan and your bottle opener, open, flame the bottle opening, pour carefully into the proper clean glassware leaving dregs in bottle, swirl, flame again, pour dregs into your beer, ignore for 6 weeks, enjoy the Orval. Seriously tho, dont pay $10 for a packet of Brett. It is too much for the small volume you are brewing, it is overpriced, and you don't get a free beer with it. Since this is old I assume you are done with it. But I have found with a higher pitch rate you get less brett characteristics. And with a lower pitch rate you get more brett characteristics since the yeast has to work harder. Adding brett in secondary I have anecdotally found those beers typically have higher brett characteristics. I pitch everything at primary and have great results.
