So, I have a saison I brewed that was fermented first with French saison yeast, but then secondarily fermented with brett trois. I know brett trois has been confirmed to be sacchromyces, despite it being referred to as brett.

Let's say I want to enter this into a competition. Would it be an American Wild Ale given the presence of the brett trois, or just treated as a regular ol' saison given that brett trois is not actually brett?

Flavor, not taxonomy are important in homebrew competitions. If it is noticeably funky, American Wild is where it should go. If it tastes like a Belgian saison, it should be entered as such.

Thanks, Mike. I appreciate it! It definitely has enough of a funky note that you wouldn't think it's a classic Belgian saison when drinking it, so I'll probably err on the side of calling it a wild.

I would imagine your beer tastes "Brett" like being that you added 644 in secondary.

I know it develops some "brettyness" even when used as a primary strain and allowed to bottle condition.
