Brewed my first stout =)

    I'm just excited and wanted to share lol.
    Brewed my first imperial stout last night, came out to 1.101 OG....WHEW
    Glad I made a yeast starter and stepped it up once!
    Now I gotta wait 4 months =(
    Just in time for winter though.

    Four months is a good start. Your beer will be better after about 8 months. With that high of a OG it takes a while to mellow the harshness of alcohol. Congradulations on your RIS!

    My only advice is to leave it in the primary for at least a month. The yeast needs that long to clean it up and smoothen it out.

    Do you have a way to control fermentation temperature? I have read that you want to keep the temp low for a big beer like this. I have heard as low as 55 degrees F!

    Yeah I can keep it around 60 with ice packs.
