Founders for sure. I don't think they've ever made a bad beer. I even liked that hoppy barleywine that everyone hated and got another to cellar!

Out of breweries I can actually get nearby (though some are hard to come by), that I will buy literally every time I see a new release (even if it's not right away): Sierra Nevada, Jack's Abby, Founder's, Almanac (sours only), Cantillon, Fantome, The Bruery, Cigar City, Other Half, Finback, Hill Farmstead, Maine Brewing Co., Threes, Transmitter, Westbrook.

Price may give me pause...if it's a 30 dollar bottle I will definitely do some research before. But there are tons of breweries who I trust enough where I'm not worried about what I'm buying. I know there will be a few I don't love but the ones I do love will heavily outweigh those I don't:

    Hill Farmstead
    Lawson's
    Alchemist
    Cantillon
    deGarde
    Tired Hands
    Grimm
Hair of the Dog (non carbonated bottles notwithstanding)
    Tree House
    Nebco
    OEC
    Russian River

Off the top of my head, sure there are others.

Stone, Samuel Smith, and the Smokestack Series by Boulevard are instant. Any special beer by Flat 12 must go in my mouth. Anchorage too; expensive but always a thriller.

    Jester King
    The Bruery
Dogfish Head (At one point I would have put them at the top of my list, but their creativity doesn't seem to be what it once was.)

Firestone Walker is consistently good. I don't know if I would buy anything from The Bruery just because their bottles are lofty, but I always get a flight of things I haven't had when I'm at their tasting room. Sierra Nevada I'll usually try anything they put out and love getting flights of new things at their Torpedo Room. Same with Lagunitas. I really enjoy Oskar Blues too. And usually make the rounds for any of my local micro or nanobreweries; Bike Dog, Track 7, Device, Knee Deep…

I will buy anything Russian River or any Firestone Walker limited release. I have yet to have a bad beer from either brewery. Heck, Consecration and Parabola blow me away every time I pop that cork.

Honorable mentions. Pizza Port, Fat Heads and Cigar City.

for me it's Great Lakes, River Horse, Sierra Nevada, and Stone. if i lived in California I don't think i could stop visiting Stone and Sierra Nevada to drink on draft and/or fill a growler.

While I understand this is an appreciation thread, it's a bit too broad for me. I'm not a fan of every style, so there's not a single brewery that fits into this category for me.

I would never guarantee buying anything a brewery makes - even my very favorite brewers make some beers that I'm not at all interested in.

Add New Glarus to that list and you pretty much have the northern plains locked down.
