not really, because organic is your basic "beer" ingredients just grown differently. GF beers have a whole different set of base grains just as sour ale category has a different set of microbes.

Yes, this was exactly what I was thinking about too. A relatively new beer style that has entered the craft beer scene recently. I have really enjoyed the Deschutes/Boulevard one this year; and was pretty impressed with the Sam Adams one, but I would be alright with it losing the apricots.

My next beer is going to be a White IPA actually. I am planning on making a standard wit recipe with half and half wheat and pils with a bit of flaked wheat, on the high end of style gravity. And then I will hop it with some Centennial and maybe Ahtanum and then control ferment temps ramped up with WLP400. Moderately soft Belgian water profile to match a wit profile.

The latest zymurgy has the chainbreaker clone. It might be helpful figuring a recipe. And I also agree on the Sam Adams losing the apricots.
