Has anyone else noticed that there are some breweries that seem to have the same aromas in their beers regardless of each individual beer's style based upon similar hop profiles?
Sometimes, but if you were in PA you could easily visit a small brewery where it would clearly and unabiguously be the hops. Some breweries use "signature" yeast strains, some use "signature" malt profiles, and some use "signature" hop profiles.
Definitely- and a lot of times I bet it's how the hops are used as well as what types the brewery favors. Lagunitas, for example, seems to get a similar house quality no matter which beer I get.
Wicked Weed in Asheville has a very distinctive flavor that I love in all their pales/IPAs. SN has common flavors in their hoppy beers but the Hop Hunter is distinctly different (to me anyway) than the others.
Sure some breweries will keep their hop profiles,especially if it's something that really sells a lot..but most,not all IPA s & DIPA's,use a combination of different hops to impart bitterness,aroma and flavor.
There are several Lagunitas beers that if I had to pick them out of a lineup I could get 4 or 5 wrong. I like them all though, so doesnt matter to me
Generally it has to do with the brewer more than anything. Unless a brewer is specifically trying to diversify hop profiles for different beers/projects, they will often brew what they like to drink. Or perhaps they love Simcoe or Citra and have a ton of it on hand; more than likely, all their hoppy beers will have a big hit of that hop character. Cheers!
