Brewing a Tripel-Cut back on O2 for increased ester production?

    So I'm brewing 5 gallons of Tripel with wlp500 to the tune of about 1.080. I made a 1.5L starter on my stir plate with pretty fresh yeast which should give me about 268 billion cells (Yeastcalc).

    I have heard that if you don't slightly underpitch with this strain that you can end up with a bland-ish beer.

    I normally give all my ales two 30 second doses of O2 before pitching. Would cutting back a little on the O2 help increase ester production? I am looking for spicieness and phenolics but not bubblegum or banana.

    Cutting back on O2 should boost the esters.

    Phenolics, including spicy, are not esters. Watch the fermentation temps.

    My plan is to pitch at 60-62 and let it rise naturally over a day or two to about 72-75.

    Does that sound solid for a Trappist character without too much fruit salad?

    Sound good. You might not let it go too high, maybe 72 would be good. Do you have Brew Like a Monk?

    I don't. I've been meaning to pick it up though. I love abbey beers but for one reason or another, I haven't brewed that many of them. Is it a good read?

    BLaM is a good read, as Stan Heironymus does an excellent job on researching and crafting the storyline. The book has good information, especially the fermentation temperatures the monks use.
