    Pitching a 1/2 carton of mango Good Belly into 5 gallons of 4.5-4.7ph wort will get you to 3.5ish pH in about 14-16 hours if kept between 90-95. No idea what 72 hours would get you. That could be a very acidic unfriendly environment for yeast. I generally will increase pitch rate substantially when pitching into a low pH wort. I don’t think a shakaroo will do anything. You’re prolly gonna need to pitch more, ideally active yeast.

    I don't think I've ever had a pre-soured wort's fermentation take off like gangbusters. Sacch yeast strains work at that kind of low pH, but they don't really like it.

    One thing...did you rehydrate your dry yeast? I've never used dry yeast in a pre-soured wort, but it wouldn't surprise me too much if low pH puts extra stress on dry yeast as it reconstitutes. Just speculating.

    Nah I just pitched another pack in each fermenter. Worth it for 8 bucks even if it does nothing. I’ve never had this issue before on my other 3 kettle sours.

    Kegged the ayinger maibock clone. Sample tasted good. No sulphur, fully attenuated. Malt comes through, hops are floral with a hint of citrus. It's got a bit of an alcohol burn, I went over my expaected OG. A lot. IIRC OG was 1.090ish. As far as the imperial harvest yeast is concerned it's a work horse, but doesn't throw the same flavors as hellabock does. I feel like hellabock screams ayinger , but I do enjoy this yeast, it is clean fermenting.

    Have you ever had a lighter colored Doppelbock?

    I first thought you were sorta joking but I re-read the BJCP style guidelines to ‘discover’:

    “Entry Instructions: The entrant will specify whether the entry is a pale or a dark variant.”

    And (emphasis in bold by me):

    “Commercial Examples: Dark Versions –Andechser Doppelbock Dunkel, Ayinger Celebrator, Paulaner Salvator, Spaten Optimator, Tröegs Troegenator, Weihenstephaner Korbinian,;

    Pale Versions – Eggenberg Urbock 23º, EKU 28, Plank Bavarian Heller Doppelbock

    I have not had any of the three pale beers above (or some other brewery’s Pale Doppelbock).

    I have not had a pale dopplebock as far as I can remember, but Samichlaus Bier Helles is one that I've been curious to try. It comes in at 14% abv so it might as well be called a pale dopplebock rather than a maibock as categorized here on BA. Maybe you have had it?

    EDIT: I just noticed that you listed Eggenberg Urbock in your post. Same brewery as Schloss Eggenberg and maybe that beer is a cousin of Samichlaus Bier Helles.

    Brewing an IPA with Maris Otter and 100% Azacca hops. My LHBS was shorted a delivery this week so I wasn't able to get the Omega DIPA or London III yeast I wanted. They recommended using Safale 33, so we'll see how it goes. Anyone have any luck using this with a NE IPA?

    Also brewing a batch of my Pilsner, mostly Saaz hops with a smidge of Amarillo late in the boil. Had to go with WY Munich Lager instead of my usual WY Czech Pils. Looking forward to having a lager on tap in July!

    Nope. I have never had a non-dark Doppelbock.

    got any other yeast to blend with S-33? Its like Windsor, doesn’t attenuate. Blending in some S04 or US05 or evening Nottingham would be wise

    Took today off from work and decided to brew another saison. This one is going back to my best recipe to date but adding in some rye. Very excited to see how this comes out.

    Kegged my rye pale ale and a spot in my kegerator should be opening up later this week. Samples I took when kegging tasted great, very excited to get this one fully carbed up and chilled.

    Yes, read that as well. I had Wyeast British Ale in my fridge so I co-pitched that. We’ll see how it goes.

    I've had all three of those, as well as the Samichlaus Helles and Donator Heller Doppelbock. All very good.

    Finally brewing my Pliny Clone. Been awhile since I’ve had so many questions on a batch but since i’am brewing the classic Pliny for my friends it made me a little nervous. My friends have said we think everything you brew is great, so that’s good.

    when picking up my ingredients my LHBS also had bottles of Pliny. Seemed appropriate.

    Finally my fourth of four kegs kicked, so this afternoon I'm cleaning up the beer fridge and cleaning / sanitizing all four kegs. One will get filled with my recently brewed German Pils when I brew my Triple Hopped Lager clone on Friday. Cheers!
