    Bottled up my ode to Allagash Interlude tonight. Blended 3/4 fresh mixed culture Super Saison with 1/4 aged for one year on an oak spiral soaked in red wine. Luckily Allagash released a new vintage recently and I was able to pitch fresh dregs at bottling. Really great yield, looking forward to popping a bottle in 2-3 months.

    Brewed a clone of Sierra Nevada Pale Ale (More Beer kit) but added 1lb of rye malt.

    Smelled great going into the fermenter.

    Brewed 16 gallons of old ale over the weekend with plans to rest in a barrel that currently has had an imperial stout for about 13 months. 1.109 SG, and was already at 1.045 when I checked the tilt this morning.

    After a few months off I brewed a Barleywine and Festbier this weekend. Two styles I've struggled to get the recipe right so using some clone recipes from the Brew Your Own Big Book of Clones recipe book (with some very small tweaks). Loved the Ayinger Doppelbock clone recipe I made this spring.

    The Wyeast 2124 for the Festbier was dead on arrival (tried a small starter and nothing happened). Believe the smack pack was already broken so noted to check that before leaving the store next time but never had it not start at all before. Anyway Amazon was able to get some S-23 to me in 2 days as a sub. No issues with that yeast as fermenting took off right away.

    Barleywine has been chugging along and will get some oak cubes in the next week or 2.

    Just brewed this year's iteration of my annual Fezziwig clone. A few small tweaks, so hopefully it'll be totally dialed in and I'll never have to buy another SA white ale to get a couple Fezziwigs.

    Where do you get hops with holes in them? Lol just poking fun.
    Speaking of hops anyone watch Hops & Gnarly on YouTube? He just posted a video about making hop resin and rosin. I really want to try that ice bath technique next year with mine.

    Bottled the gf Maple Cocoa Milk Stout and brewing yet another NEIPA. They've been coming out so well recently, so I've been riding that train. This will be the last one for a while :sunglasses:. This one is leaning heavy on the red fruit vinous vibe.

    Brewing a Brown Ale for the Orange Hat Homebrew competition on January 28th.
    Temps are single digits here so the garden hose was freezing up before it made its way to the immersion chiller. Let it chill while whirlpooling for an hour and it dropped to 175°. Transferred to my plastic fermzilla and that was a mistake. The plastic warped. Still waiting on it to drop to pitching temps in my deep freezer. [​IMG]

    Brewed an IPA with all NZ hops today. Golden Promise, Pils and Oats. Pacific Jade, Pacifica, Wai-iti, Motueka and Nelson. Omega DIPA to ferment (used my new new stir plate to prop up the starter!)

    Has anyone else bought the 2022 Nelson from Yakima Valley Hops direct? I opened a fresh package and was a little disappointed with the aroma and look of the hops. They were lackluster and looked old. I've been incredibly happy with everything I've bought from them before so I was surprised with this batch.
