Brewed a Galaxy simcoe ipa last weekend with 2row. Used 2 tsp and 1 tsp cacl in the mash water and sparge water and Conan and imperial house yeasts. yesterday a cascade motueka pale ale. Pilsner and golden promise. With dry English and London ale yeast. Used 4 tsp gypsum and 2 tsp cacl in the mash water and none in the sparge. I noticed using a water chemistry calculator that more cacl helped acidifying my mash without acid malt. Interested to see how these compare. shot for 5% might end up with 6% 20 gallons fermenting and nothing on draft... Saving my keg of Hefeweizen for a party this weekend.

I do the same thing! It's so nice/easy to get everything clean. I let it circulate for like 20mins and then follow up the BLC with star-san.

Brewing a pretty basic Hefeweizen today. I haven't brewed all month! Can't let that happen again.
Also, finishing setup of recently purchased jockey box.

Brewed American Pale Ale last Friday. Has been happily bubbling away since. Brew day was smooth, let's hope the final product delivers.

I follow up my BLC with just water because I've heard acidic stuff can be rough on perlick flow controls (sulfur aromas?).

The only thing I don't love is that my pump seems to be flowing a lot faster than the water is coming out so I periodically need to raise the keg higher to slow the flow.

Cannot find a way to adjust flow on my Eco 264 pump.

Brewed a Robust Porter on Sunday. Very, very smooth brew day. Hit my OG on the nose.

Going to save a gallon and dry bean it with some coffee. Anyone have any suggestions on brands of coffee? I have some Portola... but I'm not sure I want to use it.

Brewing a DIPA. I was supposed to brew this on my birthday. It was also supposed to have Citra, but it is going to be Azacca as a replacement. The Azacca will couple Nelson as the dry hops and a touch of Galaxy with Nelson and Azacca for the whirlpool. Centennial at 30 for bittering. It's going to be a delicious beast of a beer. Burton yeast instead of London III.

    Using London III after all.
