brewing concentrated extract wort

    How does it decrease the hop utilization penalty?

    The average gravity during the boil is lower than if all the extract had been added at the beginning.

    Thanks. So from a hop utilization standpoint, what happens then when you add the remainder of extract + top off water?

    When you add the remainder of the extract, it makes it harder for additional Isomerized Alpha Acids to dissolve. But you're already ahead of where you would have been if you had added the extract earlier. This type of phenomenon is why the models (at least the Tinseth model) use average wort density (gravity). Though I have seen some sloppy implementations of the Tinseth model that just use the pre-boil or post-boil OG and call it a day.

    When you add top off water, whatever Isomerized Alpha Acids you had are diluted (proportionally) by the water.
