Has anybody brewed beer, mead, or wine in a ceramic vessel? If so do you have advice, hints, tips etc that you would be willing to share?

If you google brewing in amphora, there's a lot of articles on it. Maybe reach out to one of the breweries mentioned in one of the articles?

Reached out to quite a few and as of now heard back from precisely zero of them. I did find this article which gives some instructions on how to ferment with wine. I’ll let you know if I get a response or find more articles.

My great grand mother used to brew in 10 gallon and 5 gallon ceramic crocks. I never saw it, but my father got them a few years ago. He has yet to try brewing in them, but remembers that his grand mother did not do too much beyond mixing the ingredients, pouring it in and adding yeast. The ones he has have birch lids that are rather loose fitting. the insides are smooth ish and seem easy to clean, but I am sure there is pitting in there.
