Brewing with pumpkin

    I'll be brewing a pumpkin stout next weekend with some friends and have never brewed with it before. This is open ended, but I'm looking for any tips/things to avoid. Thanks!

    Just looking for feedback on a Pumpkin Stout I'm doing with some friends next weekend. I know there's another thread out there already, but I didn't want to thread jack. Thanks!

    12 LB 2 Row Pale - US
    1.25 LB 60L Crystal - US
    12 oz 80L Crystal - US
    12oz Chocolate - US
    4 oz Roasted Barley - UK
    8 oz Molasses
    12 oz Flaked Barley
    12 oz Flaked Oats
    1 can 29oz Pumpkin

    Protein Rest at 122 for 20 Min - No Pumpkin/Molasses
    Mash at 154 for 60 Min - Add Pumpkin
    Sparge at 175

    Boil for 60 Min - Add: Molasses

    1oz Northern Brewer - Bittering
    0.5 oz Amarillo - Flavor
    0.5 oz Amarillo - Aroma

    1T and 1t Cinnamon, 1t nutmeg, 0.5t cloves at Bittering
    1T and 1t Cinnamon, 2t nutmeg, 0.5t cloves at Flavor

    WLP001 Yeast

    2 Vanilla beans split and quartered, sanitized, added to secondary

    Batch Size: 8.75
    Boil Size: 7.25
    OG: 1.056
    FG: 1.014
    ABV: 5.5%
    IBU: 18
    SRM: 28

    Yikes, way way way too much going on. This seems like a textbook example of inexperienced recipe-development. Kitchen sink approach is almost never good.

    Drop the 80 crystal, drop the molasses, pick either flaked barley or oats. Drop the Amarillo, the peachy/apricot notes seem to clash heavily with roast of the stout and the spices. Don't add any spices at bittering, they aren't hops. Flavor addition seems ok, but I don't have my brewing notes in front of me, so tough to say on the amounts, but too little spice is always better than too much.
