    I'd tend to agree, but at a certain level, there are beers that are balanced to the point of boring. Perhaps that's just looking at the problem from the wrong angle. In either case, a lot of popular brewpubs make mediocre, boring beer, whether they are balanced or not. They usually have great atmospheres, however.

    agreed. i guess my point is that making mediocre beer turns your brewpub into another restaurant. if it's a good restaurant then i guess you'll do well regardless but then why bother making your beer on-site?
