    I picked up two bottles of this year's BOYD a few weeks back. I have been planning on opening a bottle soon and putting the other away for a while. How has it been drinking? Is it worth opening one up right now?

    How is the latest Hellwoods drinking? I only bought one, should I let it rest for a few months at least?

    i'd cellar this year's BOYD. i had a bottle of last year's after 1 year and i really enjoyed it. lost some of its heavy intensity.
    now, this year's BOYD recipe is slightly different and less "heavy", but, when i had it on tap, i thought "this needs 6 months, minimum."
    just my opinion.
    Hellwoods drinks well. it can probably be cellared, but i'd imagine that it would lose that smokiness.

    I had the same thought. I think it is a prime candidate for aging.

    Last years BOYD was great with about a year on it...

    and i don't love how either Skeleton Key and BOYD drink fresh (or on tap). too fresh, needs to mellow substantially.
    last year's BOYD was really nice fresh, but really really intense.

    Skeleton Key has already improved significantly since it was released (on draft at least). I've only had BOYD out of the bottle and I didn't find it overly boozy, but I also think I suffer from palate threshold shift.

    If you're the type of person who drinks hard alcohol 'neat' these bears are good to go. Otherwise, they might benefit from 3-6 months.

    This is where I wonder why I have any cellar at all.
    I like it a bit hot and boozy. Want to enjoy the cognac while its still present.

    I wouldn't intentionally age any of Bellwoods stouts. They are all good to go.

    As for Lambda.... that should be fun in a couple years.

    I think 95+% of beers are best fresh. My 'cellar' is a function of purchasing more beer than I can safely consume.

    Exact same page.

    I keep telling myself that shit is going bad and needs to be drank.
    Then R10 hits LCBO shelves.
    Then the neverending bottle releases in MI.
    Bloddy hell.
