Brooklyn BCS...experiences cellaring?

    i have had one i been cellaring for a little over a year but think i will wait till next year sometime
    probably will be perfect at the 2-3 year mark

    I've had it at 3-4 years old and it's really nice. I'm not super into the cellaring thing but this seems like such an obvious candidate, I just do it. Very little heat, but still rich and chocolatey, yet not too sweet. No hop flavor but an appreciable tinge of bitterness.

    Just had one of last year's last night, and I personally liked the fresh one better than the 1-year-old BCS. It seems to be in an awkward spot, lacking some complexity yet still with a fairly intense hop bitterness. I still enjoyed the beer overall, but I remember liking it better fresh.

    I have 2 more from that 4-pack, so I'll try some in a few months.

    I'm looking forward to putting together a good sized vertical of this (though I do like it fresh). I've got at least half a case of each year going back to winter 09-10, as well as a couple bottles of 05-06. Hard to beat this for a sanely priced RIS.

    I bought a case of the 2010-2011 and opened one every week or two. It only got better with time. Such a solid beer for the price, and I'm probably in the minority that enjoys it fresh.

    I had a 2005 vintage at Gramercy Tavern a few weeks ago and thought it was good but definitely past it's prime. I'd say 4-5 years max on this. 1-2 years and it's drinking amazing

    Just had a year old bottle side by side with a fresh bottle and the year old bottle was waaaaay better!

    I don't think I'll ever drink a fresh bottle again!

    just had a 09 and it had gone downhill so i decided to open an 08 and it has a much fuller, creamier, mouthfeel. The taste also isn't as sour tinged.

    Hands down my favorite beer to age. Great fresh, absolutely stunning with age. And at the price point, it's an incredible bargain for the style.

    It comes in 4pks, and it's significantly better after only 1 year in the cellar. You might be surprised?

    I've never tried it aged, but am aging some now. I hear that it ages extremely well. Moreover, since it's so widely-available and relatively inexpensive, it makes it very low risk.
