Bruery 2015 RS/HS Allocations

    OT, SitR, and Sans have all tasted fine this year to me, but the carbonation is a bit off. Not a complaint, just a noticeable difference.

    I haven't had it out of a bottle yet, so I may revise my opinion of it downward. On draft, I didn't get much roast out of it, which I thought was to its benefit. I bought one bottle since it didn't show up for tasters until this past Monday - when I happened to be there - so I'll end up trying it again at some point. Can't say I had any impulse to buy another bottle, even though I didn't think it was bad per se.

    At least they didn't give us another Roble Blanco...

    HA! That's funny you think it works like that. They've never taken requests from us (outside of casks for SMM). I'm sure the lineup for 2016 has been set for months as well. Most of those beers are already sitting in barrels.

    Maybe I read over this too quick, both times, but is he saying the 2015 bottles of White Chocolate are or are not pasteurized?

    Wow. Is this the first/only beer they've pasteurized? I guess there's zero point aging them then, right?

    I'm assuming it's the first beer they've released that has been pasteurized since they recently implemented the system - for all we know, Chocolate Salty BBLs could be as well - but I doubt the Bruery wants to get into a habit of specifying which beers are pasteurized and which are not, so going forward, you can pretty much assume that clean beers with adjuncts are pasteurized. They may end up pasteurizing clean beers without adjuncts as well. I suspect they'll do some testing on that front and see the longterm effects, so they will likely adjust their usage over the next 24 - 36 months before deciding precisely which beers they want to pasteurize.

    Not really, no. As PMR stated, pasteurization limits the aging activity of yeast/bacteria, but does not stop chemical reactions like oxidation. There's arguably benefit to very minimal autolysis in strong ales, but IMO, the benefit of microbial stability strongly outweighs the absence of the possible byproducts of live yeast at the time of bottling. Aged in good cellar conditions, a beer like White Chocolate will still age in largely the same fashion as an unpasteurized/uninfected batch, so you can mostly proceed as you would have in the past.

    It's also worth considering the pasteurization is only one variable in the question of aging beers. They've gotten new bottling lines multiple times in the history of the brewery, presumably better and with less dissolved oxygen in the final product, not to mention adjustments in filtering and quality control. Whether a given beer is suitable for aging is up to the person holding the bottle and what they're looking for, but pasteurization isn't a deal killer in strong ales, unless you're specifically a fan of how bottle conditioning/live yeast impact a given beer.

    I've had WC 15 on tap and from the bottle. While not as good as '12, both times I've had it, they tasted fine. Certainly nowhere near like '13 & '14

    I remember seeing a similar video back when I had my bad 2013 down to the nasty dishes in the sink. The video quality in this would lead me to believe its older too.

    I'll see if I can find it.

    I have an android and the video is from my friends iPhone. When you send an iPhone video via text to an android the quality sucks.
