´I am more concerned that the report is from 5 years ago.´

Me thinks it´s a long time outdated water report .There are multiple factors that could make this report absolutly obsolete, thus you are going to fly blind adding salts to get uncertain results.I wouldn´t play with water chemistry if I don´t have a newer water report,IMHO.

Edit. Just take a mash Ph read and act accordingly.

I have played around with Bru'nWater, but haven't actually brewed with it or made a direct comparison with EZWater for anything complicated.

I do usually build my water from distilled water (similar to RO), and found EZWater's predictions to be very good. Close enough that I don't often measure pH anymore, particularly when using recipes/ingredients I have used before. My philosophy is to build primarily for flavor and yeast flocculation, and that as long as the pH is also in an acceptable range, I'm happy.

Brunwater has been pretty accurate for me. Martin Brungard has posted on other forums that Rahr 2-row comes out low, about 0.3 for reasons that the malt may have more acidity. I still have half a bag of Rahr 2 row to use, so I will keep my eye on it.

So I just downloaded EZwater. It predicted the room temp ph = 5.74 vs. 5.6 for Bru'n Water. Given that both are higher than what I measured and close to each other, I am going to guess that the water report is not correct. I guess I need to get my act together and get a report. Thanks for the help, I suspect I will be back with more water questions:slight_smile:
